About the Chef
Born and raised in Southern Oregon, William C. Shine II knew from a young age that he wanted to be a chef. His culinary career began in high school when he joined a catering group called Service By South, a company that catered business luncheons and large events in Southern Oregon. In addition to valuable experience, this venture allowed him to raise enough money to attend a week’s worth of cooking classes at the Disneyworld Resort in Orlando, Florida.
Upon graduating from South Medford High School in 1998, William headed north, where he attended a two-year, year-round culinary program at The Art Institute of Seattle. While studying, William joined the culinary team’s singles competition, where his dish, a spiced pork chop with huckleberry jus (currently on Hearsay’s menu), earned him a silver medal.
William graduated in 2000 and was hired as a full-time chef at the Multnomah Athletic Club in Portland. Missing his friends and family, he returned to Southern Oregon, where he began to witness the region’s culinary growth.
Every year William enjoys competing in the Ashland Culinary Festival, a fun and healthy competition between chefs from various local restaurants. In 2013 William competed in Iron Chef Oregon in Portland, where he took second place.
William has worked all over Southern Oregon, from the Ashland Springs Hotel to the Jacksonville Inn, Omar’s, Chateaulin, and Macaronis/Martinos, where he cooked for six years. He now resides here at Hearsay as the Executive Chef.
William is married to Violeta Shine, and they have four wonderful boys. William enjoys teaching his boys how to cook, eat healthy, and choose local. They enjoy having a chef for a dad, knowing that they’re getting the full restaurant experience from the comfort of home.
William’s menu at Hearsay was crafted with the speakeasy theme in mind and pairs well with the multitude of handcrafted cocktails on offer. In other words, it embodies comfort… with a twist.
